ICHIBEN Steamy Ramen Broth- Our special cooked-from-scratch broth is low simmered for 8-10 hours resulting in a clear stock with layers of intense flavor. You can choose from Shoyu or Miso. The third choice, Paitan is kanchi for white soup. This signature pork and chicken soup is slow boiled for 10 or more hours until the stock turns a milky white color. It is rich in collagen and flavor, also known as tonkotsu, and it’s a regional style from Southern Japan. Ours is delightfully light and smooth, without the greasy taste because of our constant skimming all day. We do not use ajinomoto, MSG in our cooking, including the soup stock. Ramen Noodles- Our noodles are custom made fresh locally to our special recipe, with an extra firm texture. If you prefer yours soft, please ask your server. Wok Fried Rice Our Chahan is individually wok cooked with our special blend of minced garlic and onion to bring out the full “wok flavor”. Flaming Grill (BBQ) Our BBQ chicken and kalbi are marinated in Korean style sauce with Shoyu, sugar, ginger, garlic, black pepper and sesame oil for at least 12 hours to bring out the full flavor. Tasty Curry Our curry is mild Japanese style with a slightly sweet vegetable flavor. It is home made with a garlic-onion and carrot roux. The sweetness is complimentary to the rich curry aroma and enhanced by chili pepper and bay leaves. Beef Curry Rice- Chunks of curry-stewed beef Chicken Katsu Curry- large chicken fillet panko breaded, deep fried to golden brown and topped with curry sauce. Spam Katsu Curry- 3 slices of low sodium Spam, panko breaded and deep fried smothered in curry sauce, an island favorite.
